Fluffy Pancakes Are Calling!

My husband worked as a chef for many years. 

This is his perfected pancake recipe that he worked on for some time. Sorry crepe lovers this might not be for you. But if you like pancakes really fluffy - then you are in the right place.

Isaac's Fluffy Pancake Recipe.

Ingredients:
3 eggs separated
3 tablespoons caster sugar
1 tablespoon milk
1/2 cup of SR Flour
1 tsp Vanilla
Butter for cooking

Method:
Whisk egg yokes with 2 tablespoons of caster sugar until smooth and fluffy
Add milk, vanilla and sifted SR Flour and whisk until mixed well.

In a separate bowl, whip egg whites and 1 tablespoon sugar into meringue - until the egg whites hold their peaks and are glossy.

Fold egg yolk batter into the meringue gently - don’t over mix as you want to keep the lightness. This is what gives the pancakes their fluffiness.

Lightly butter your pan, and on low heat,  spoon in a generous dollop of batter.  Cover and cook for 3-4 minutes. Once the bottoms are golden, you can carefully flip them. Cover and cook until done.

Serve straight away. These pancakes are at their fluffiest when warm and will naturally settle as they cool.
